Mochi Matcha

Materials:

  • 1 1/2 cups sweet rice flour
  • 1 cup sugar
  • 1/2 teaspoon baking powder
  • 1 1/2 teaspoons matcha powder
  • 1 cup of water
  • 3/4 cup coconut milk
  • 3/4 teaspoon vanilla extract
  • Cornstarch (for sprinkling)

Implementation:


  1. Preheat the oven to 135°C. Grease a square glass baking dish.


  2. In a medium bowl, whisk together the rice, sugar, baking powder, and matcha tea powder.


  3. In a separate bowl, whisk together the water, coconut milk, and vanilla extract. Pour the wet ingredients into the dry ingredients and whisk until combined.


  4. Pour the mixture into the baking pan, cover tightly with aluminum foil and bake for 60 to 80 minutes, until the surface is firm.


  5. Remove the foil, let it cool, then cover it again with foil and leave it at room temperature overnight.


  6. Turn the mochies out onto a cutting board and cut into small cubes. with a sharp knife. Sprinkle with cornstarch.

These matcha motchies have a subtle bitterness from the matcha, a wonderful chewy texture, and a light sweetness that wins you over from the first bite. Perfect as an afternoon treat or a special treat that goes beyond the ordinary.
